Do you have any pictures from the front and rear? That would help see the offsets you have now. You should be okay with a +48 offset. If you are worried about rubbing just do an inch drop, like Tein S-Techs. Or if you you want to spend a little more money you can go with Coilovers to adjust your ride height. And if push come to shoves, you can roll your fenders and/or use more negative camber.

The only problem that you may have is getting the alignment to be in spec. The rear toe setting will definitely maxed out, and probably still not be in spec. You also may have trouble getting camber in spec. You can buy kits to these adjustments in spec.
Depends. If you get all the stuff to make the alignment correct, it will make your handling better. If you go too low, you will be riding on the bump stops, which will make the handling much worse. Like said, an inch drop seems to be great for the S2000.
