An alarm will also not stop a brick on a string going through any window on any car...so your argument of a sharp knife, is a bit flawed.
The purpose of an alarm is to make noise, attract attention and hopefully scare off amatuer thieves. Nothing will stop a professional car thief.
Ultrasonics/microwave detection inside the vehicle is a good option as it will detect movement inside the vehicle even if there has not been a door opened etc. A knife through the roof or a smashed window will trigger this type of alarm.
Extras at car dealers often cost a little bit more than if you shopped around and organised to get these done in your own time.
There are many sorts of car alarms available and not all of them are as good as the next one. In Australia we have a particluar standard that the car alarm must conform to for insurance purposes. Check with your insurance company first.
